I'd go to Castello Banfi. It has everything in one place, and it's all first class. There's a great tasting room. There are also two restaurants, one a two-star place. There's a very interesting museum, with lots of samples of wine glasses. Also don't miss the balsamic vinegar aging room. The hotel is small and expensive, but it's great. The folks at Banfi also claim that they get you all sorts of special treats such as taking a test drive in a Ferrari. That's extra, of course.
